The Business

Il Fico is a family-owned company offering its customers  an experience filled with special charisma and tradition. This is especially apparent in our cultivation of what is called "Fico Munnato". These are figs which are specially treated at all stages of production,  and subsequently then transformed into a dried product. In addition to the passion and tradition that characterizes its agricultural operations, the company of Agropoli also consistently emphasizes the human element. We offer a friendly and reliable service. We enable that magical union between nature and people.

Tradition, tradition everywhere

The cultivation of the 8 000 White Figs plants. The harvesting and subsequent stages of drying in the sun. The further processing. Throughout all these stages, the ancient techniques of local tradition are respected. This ancient process includes certain steps that the manufacturer has repeated for centuries. Doing things this way ensures that the process is not industrialized, leading to lower quality figs. Each decision is made according to a "ritual schedule" determined by nature and its rhythms. In every aspect of our work, we emphasize traceability and transparency.

At Easter, we have the award-winning Sal De Riso pastry, with the white fig dove from Cilento DOP.

Panettone Cilentano

Cilentano, Combined with the local excellence behind every product, is born the Panettone Cilentano. This is a delicious, sweet, Christmas cake based on white Cilento DOP figs, with almonds, walnuts and wild fennel.

The quality of Cilento raw materials combined with the creativity of the well-known master pastry makers Sal De Riso, for a delicious and original product that will put additional spark into your Christmas holidays and surprise even the most discerning of palates.

Fichi maritati

Dried white Cilento figs and fennel stuffed with toasted almonds, lemon peels and laurel leaves.

Dried Figs

Vaporettos are tasty variants of the classic white "munnati" figs of Cilento that are cooked with steam. They are accompanied by the renowned white Melassa figs of Cilento, another one of our specialties.

Obtained from the "Fico Bianco del Cilento" or white figs of Cilento - which is known for its qualities is a major DPO - the drying is a slow process of desiccating the figs in the sun. The drying only takes place once the figs have been peeled one by one by hand. This is an art and doing it right demands a high level of passion and respect for tradition. It is an entirely Cilentan tradition.

After drying in the sun, the figs are individually selected and cooked with steam. This type of cooking gives the figs a slightly amber color and a caramel-like smell.

Finally, the roasted and cooked figs are sprayed with Melassa, a filtered coating of white Cilento figs, with an intense, yet gentle, delicate taste.

For us “munnare” is not just a phenomenon from another time.

Molded Figs

Figs in leaves

Based on an old family recipe. After carefully sorting and selecting the best white Cilento DOP figs, they are dried in the sun on wooden grates. The company still uses these grates as Cilentan tradition. We then wrap them in fig leaves and put them in a wood oven. The wood that we use is organic olive wood, once pruned, as well as myrtle (or hornbeam). These shrubs are typical Mediterranean bushes that are commonplace in Cilento. The ancient Romans used them for their olfactory characteristics.

The end result is no accident: it has a product with a satisfying and delicious aftertaste: simply amazing.

The fig is "risen," coming alive in the form of a dove. It is a kind of "natural leaven" for our fig tree. A continuous evolution of taste and style. The wide range of products offered by Azienda Agricola il Fico would be incomplete if it wasn't for the star of Easter, the dove.   Offered in a variant that is Made in Cilento, this delicate sweet is prepared according to an ancient recipe using top quality raw materials.

This new variant of the dove is covered in tasty and delicate icing.

Perfect in combination with the il Fico Ventitré, distilled from white Cilento DOP figs.

Ingredients: Natural buckwheat product made of white Cilento DOP figs, "0" flour, manitoba, natural yeast, margarine, malt, honey, dark chocolate, sugar, egg yolks, butter, salt, powdered milk, natural flavours, bitter almonds, hazelnuts, and oil. It may contain traces of nuts.

Molasses

Straight from Cilento now comes a new kind of delicacy: molasses made from white Cilento figs. This product will sweeten your special occasions and surprise even the most discerning of palates.

First, let's find out what exactly it is: it is a series of filtered and cooked white Cilento figs, with an intense, yet gentle and delicate taste. Amber in color, molasses is great for cheeses, roasts, sweets and ice cream.

Perfect in combination with il Fico Risorto, the dove at the foundation of white Cilento figs, as well as with steamed munnati figs.

Mannola

The union of fig and almond gives birth to Mannola. the perfect delicacy for any time of year. An ancient recipe that has been handed down from generation to generation. Our grandmothers gave this to us to keep the true Cilento almond paste alive in combination with the highlight of our land, the white Cilento DOP fig.

Perfect in combination with il Fico Ventiré, as distilled from white Cliento DOP figs.

The leading product of our company that boasts its own production process, the "munnati"  white figs of Cilento are dried in the sun and represent the most typical experience that Cilento has to offer.

Heart of figs

Cuor di fichi are our cookies stuffed with white Cilento DOP fig jam.
The soft heart of jam and the fragrance of the cookie create characteristic flavors.
The strengths of this product include the traditional recipe used as well as the high quality ingredients.
In Cilento, we are very good at modeling and cutting them in different ways, creating a whole range of very Baroque shapes.

Fichi Bianchi del Cilento straight from the oven

Here the white Cilento figs are dried by means of an ancient Cilento process. The figs are dried by slowly baking them in the oven.  Once finished, the fruit takes on a brownish colour with the taste and flavor still intact.

Bamboo figs

Our so-called "packaged" figs are extremely popular and prepared according to ancient tradition. The fig is dried in the sun for about 8-10 days in broomstocks, allowing for ventilation and flavouring of the fruit. Once dried, the white fig is "packaged", ie split and filled with toasted almonds, lemon peels and laurel leaves. According to tradition, these seasoned figs are then stacked with wooden slats. From thence the name, "bamboo figs."

Supreme figs

A recipe handed down by a nobleman from Cilento, and carefully guarded by those who have had the honor to inherit it.  The supreme fig is surely one of the oldest fig-based products you can find anywhere.

A pastry roulade made of white Cilento figs, combined with hazelnuts, almonds, cinnamon and lemon peels. And then to round it all off, a natural embroidery created by the beautiful round shape of the fig and a white chocolate casting.

White Cilento figs in the sun

Authentic excellence which is based on our high quality, white Cilento figs, these figs offer a rich and fresh pulp. Sweet to the taste and amber yellow in color, with a very sweet yellow amber color, with large empty spaces and almost completely filled internal receptacles. Dried in the sun, according to an ancient tradition, the product is hand-made only after careful selection.

The product drying and processing steps take place entirely in the geographical area of production, at our farm. This allows for a harmonious interaction between product, man and environment.

Twenty-three figs

Ottenuto dalla macerazione della polpa dei Fichi Bianchi del Cilento, ha un attraente colore rosso porporino, assai vivace. Il suo sapore delicato si accompagna bene con formaggi misti.
Obtained from the white Cilento fig maceration process, this drink comes in a very lively and attractive purple red color. Its delicate flavor goes well with mixed cheeses.
Great in combination with chocolate and cheeses.
